Bollito Misto is a classic dish of northern Italy, especially in Piemonte around Cuneo. There is also a famous version in Modena, which is where the picture comes from. Zampone, a stuffed pig’s foot, or Cotechino Modena (pork sausage) often appears in this version. Both versions include a zesty green sauce, and the Modenese is also likely to come with mostarda di frutta.

The key to the dish is the variety of meats, all of which have different cooking times. Despite bollito misto’s humble ingredients, it is often served from enormous and shiny pots on rolling tables, and is quite an elegant family meal, even in a restaurant.
