The embutido or Filipino meatloaf is a great example of a holiday recipe that you can easily make for other special occasions. The time and effort needed for this dish make it ideal for serving on any day to make it more special.
This is made with sweet pickle relish to give it sweetness and cheese cubes so it’s got creamy pockets! Serve it with your choice of banana or tomato ketchup.

Beef Embutido Ingredients
- 1 1/2 kilos Ground beef
- 1 1/2 Cup breadcrumbs
- 1 Cup carrots finely chopped
- 1 Cup red bell pepper finely chopped
- 1 Cup white onion finely chopped
- 1/2 Cup sweet pickle relish
- 1 Cup Cheese cut into 1-cm cubes
- 1 1/2 cups raisins
- 3 large hard-boiled eggs sliced
- Salt to taste
- ground black pepper to taste
Instructions
- Place the ground beef in a large bowl. Add the bread crumbs with the ground beef. Mix well. Add the carrots, bell peppers, onion, pickle relish, and cheddar cheese. Mix thoroughly. Add the raisins, salt, and pepper then mix well again. (If needed, cook a tiny portion to test for seasoning and adjust to taste.)
- Place the meat mixture onto a sheet of aluminum foil and flatten it. Place the sliced boiled eggs in the middle of the meat mixture. Roll the foil with the meat mixture to form a log with the eggs in the center. Twist the edges of the foil to seal. (Make rolls that are smaller if necessary so it will fit your steamer.)
- Place in a prepared steamer, and let it cook for 1 hour.
- Cool completely. Chill inside the refrigerator until the roll turns cold. Slice and serve with ketchup. (You can fry the embutido slices before serving if desired.)
