If you've not tried the traditional Mexican seafood dish aguachile, you need to, asap. Essentially a ceviche, traditionally made with prawns or scallops that are then marinated in lime juice and served with a chilli-lime marinade. Perfect for a Mexican-inspired feast.

Ingredients
- 165 g
raw King prawns
Juice 6 limes
Pinch of salt
- 1
small bunch coriander, chopped
- 1
green chilli, chopped
- 1
red onion, finely sliced
- 1
cucumber, cut in half, core removed and finely sliced
- 1
jalapeño, finely sliced
Directions
- Step 1Add your prawns to a ceramic or glass ball and pour over three of the limes and a pinch of salt.
- Step 2Leave in the fridge for 10 minutes, turn the prawns and leave for another 10-15 minutess, until all of the prawns have turned pink.
- Step 3In a blender, add half your bunch of coriander, the chopped up green chilli and the juice of the remaining three limes. You may need more lime here to thin out the sauce. Drain the prawns.
- Step 4 Mix the finely sliced cucumber in with the prawns. Pour the sauce over the prawns and cucumber and top with red onion, jalapeño and remaining coriander.
