About this destilado de agave

Rezpiral Salmiana from Berta Vasquez was produced using Agave salmiana that took 18-20 years to reach maturity. The maguey were milled by tahona, fermented in cypress for 12 days, and double distilled in copper alambique stills. This was initially released as part of Rezpiral Series 7.

Rezpiral brings selections of high-quality traditional small-batch (non-certified) Mezcals into a handful of places in the USA. At the core of the project is the embrace of an ethos that aims to respect and support the multi-generational knowledge, independence, flavors, lands, and ways of each mezcalero family.

Rezpiral’s small scale allows for the advocacy of diversity on different levels, from supporting the autonomy of producers & their continued production of artisanal mezcals to the preservation of local land control. Rezpiral actively supports master artisan’s proactive planting and management of agave; recollecting and incubating seeds, transplanting and farming diverse species of endemic agave in sustainable ways. Rezpiral directs 10% of earnings back into supporting artisans farming.

Rezpiral has a regional greenhouse to support independent small scale mezcaleros in cultivating and reforesting their lands with local endangered wild agave varietals. They also are highly focused on a cultural and conservation residency program.

Second time sipping this. There are some strong smoke notes as are common with Berta’s mezcals but the agave flavor matches the smoke in a good way and adds a lot of balance. There are notes of charred sugarcane, smoked celery, bit of pine. Not sure I’d guess this was Salmiana. Definitely one of the better Berta batches. Series 7.

Series 7. Berta’s mezcal is very hit-or-miss for me, and this one…. is a hit. This has aromas of dry herbs, like spearmint, thyme, and bay leaves. There’s also a slight hint of wood on the nose, but not like burning wood, more like living giant cane or bamboo. The palate has notes of toasted nuts, flaxseed, and rolled oats. There’s some faint smokiness, like a nice hand-rolled Peter Stokkebye Amsterdam Shag cigarette. A note of brand new basketballs also sit on the tongue through the finish. This is really nice.

In a word, phenomenal.

Nose is delightful. Mild leathers, tacos pastor and thyme. Nothing foul – no ethanols or rubbers or anything offensive at all here, very inviting in fact. Very approachable.

Palate is even better – Rich and well balance earthiness, deep bell pepper flavors and lightly toasted macadamia. A tiny dash of cinnamon, possibly turning into a semi-sweet dark chocolate hint but it’s more complex than that, I’m just not able to describe it properly. Delicious.

High viscosity which I believe is why it lingers forever. You feel this deep in your chest in a warm, wonderful way for a long time. So smooth and never turns foul or odd during the completion, it continues to call me back for more.

I would happily enjoy this in perpetuity if money and availability were not prevailing factors. My humble opinion is to buy two bottles of this if you can find it, you will not be disappointed.
