  • In a large frying pan, cook the onions & garlic in the butter & olive oil on medium heat for about 5 minutes. Stir in the tomatoes, ground beef, herbs, salt & pepper. Cook until the meat is browned thoroughly. Turn off heat & add egg yolk & Parmesan cheese, stirring to mix completely.
  • Spread the meat in the bottom of a lightly oiled oven proof dish (a 9x13 would be perfect). Spread the potatoes on top of the meat mixture. And finish by sprinkling the grated cheese on top.
  • Bake in 400 deg oven for 15 to 20 minutes, until the cheese is melted & the potatoes lightly browned.

  1. Even though we aren't normally casserole eaters, we really enjoyed this flavorful & super easy dinner. I didn't have fresh tomatoes (I'd made a team salsa today & used them up) so I subbed a can of diced roasted garlic & onion flavored tomatoes & I left off the cheese on top as DH & DD can't eat it it (the parmesan amount was fine though). I didn't like the idea of all the grease so I browned the meat in one pan, drained it then added it to the onion, garlic, butter & oil that had been sauteeing. Thanks for a nice, quick weeknight recipe, Jackie! Made for ZWT 5 - Ali Baba's Babes. :)
     
  2. AWESOME casserole! I only used one onion, but added 2 stalks of celery (great addition, I might add). I then cooked those up and added the beef, pouring off the fat when done. Then added the tomatoes and herbs (WAY more than 1 T). I added some champignons (mushrooms) which were a great addition. I then topped it off with leftover roasted garlic mashed potatoes. I topped mine off with some fresh chives. Great stuff!!! My only complaint is that the bottom of the casserole was very watery, so I just used a slotted spoon to serve. Made for a teammate for ZWT5.
     
  3. This is delicious. (It's almost like a Pate Chinois, a meal we do in Quebec, with ground beef, corn and mashed potatoes, but it's not my favorite). I really like this recipe. I browned the beef and onion in a non stick skillet, without oil and butter. Then I added the tomatoes and herbs. On top, I used low-fat swiss cheese but not a lot. For the mashed potatoes, I used recipe#373001 Thanks Jackie :) Made for the Saucy Senoritas of ZWT5

I'm from Ohio & my husband's from Oklahoma. We met & married in Washington, DC. Soon we moved to Oklahoma & lived there for 20 years, raising our 2 daughters. John is an electrical engineer & we had our own consulting firm there. In 1996, a year after our youngest graduated from high school, John took a job with an international company, & I retired. We took to the road. We lived in Puerto Rico, Panama, Texas, Montana, Pennsylvania, Massachusetts, Colorado & California. We'd be in each place about 6 to 8 months while he built a substation, then we'd be off again. We loved it. We'd be somewhere long enough to get the local feel, but not long enough to get bored. Montana & Massachusetts were our favorites, so about 2 years ago, when the time came to settle down, John went job hunting again. Not many engineering jobs in Montana so Massachusetts won the prize...Us. We love it here, especially all the history. The only drawback is both our daughters live in Seattle (about 3500 miles away). Thank heavens for telephones & email. Airplanes keep us together, but it's a long flight. We figure someday we'll have to move out there, but hopefully not for quite a few years. I have always enjoyed cooking & used MicroCook for many years. I have thousands of recipes in that program. In fact when I got a new computer, the guru that assembled it for me had to figure a way to get it on to my new computer. I also have tons of cookbooks...just ask my husband. They take up 3 bookcases. I hope you enjoy any of my recipes that you try, but I know everyone's taste is different. I love reading the reviews & trying new stuff.
