Ingredients
Vanilla Cupcakes:
- 3 c.
all-purpose flour, spooned and leveled
- 2 c.
granulated sugar
- 1 tsp.
baking powder
- 1 tsp.
baking soda
- 1/2 tsp.
salt
- 3/4 c.
canola oil
- 4
large eggs
- 2 tsp.
pure vanilla extract
- 1 1/2 c.
full-fat buttermilk
Green food coloring gel
Vanilla Buttercream:
- 1 c.
unsalted butter, at room temperature
- 2
to 3 tablespoons whole milk or heavy cream
- 1 tsp.
pure vanilla extract
- 4 c.
confectioners’ sugar
Green food coloring
Decorations:
- 1 c.
melted dark chocolate
- 1
to 2 teaspoons black food coloring
Small candy googly eyes
Chocolate sprinkles (for hair)
chocolate chips (for bolts)
Directions
- Step 1Make the cupcakes: Preheat oven to 350°F. Line two 12-cup muffin pans with paper liners. Whisk together flour, sugar, baking powder, baking soda, and salt in a bowl.
- Step 2Beat oil, eggs, vanilla, and buttermilk on medium speed with an electric mixer until combined, about 1 minute. Add flour mixture and beat until combined, 1 to 2 minutes. Stir in food coloring. Spoon batter into prepared pans, filling each cup about two-thirds full.
- Step 3Bake, until a toothpick inserted into the center of a cupcake comes out clean, 16 to 18 minutes. Cool in pans on a wire rack, 15 minutes, then transfer to rack to cool completely.
- Step 4Make the buttercream and decorate: Beat butter on medium speed with an electric mixer until light and creamy, 1 to 2 minutes. Beat in milk, vanilla, and 2 cups confectioners’ sugar. Add remaining 2 cups confectioners’ sugar and beat until combined. Beat in food coloring, adding as much as you like to achieve desired color. Frost cupcakes.
- Step 5Stir together chocolate and food coloring in a bowl. Transfer to a zip-top plastic bag with a small hole cut in one corner or a squeeze bottle. Add candy googly eyes. Use chocolate to draw mouth, eyebrows, and a scar on one cheek. Add sprinkles for hair. Add chocolate chips, point sides in, to the sides of each cupcake for the bolts.
