Cook the rice in the rice cooker with salt, oil and some cumin
* Encocado de camaron *

- Flavor deshelled shrimp with salt + pepper + color (achiote or turmeric)
- Pan Cook garlic with oil until it smells (2-3 mins)
- Add diced onion, diced peppers, salt, cumin, pepper to the pan.
- Lower heat to medium low, cook until veggies are tender (15-20 mins), covered. DO NOT let it dry out.
- Add coconut milk to pan, cover and cook for another 15 mins to help reduce, thicken and warm up the milk.
- Add shrimp and crab meat to the pan, cover and cook for 10-15 mins. Don't overcook the shrimp.
- Serve over or on the side of rice
Coconut milk can be replaced with FRESH shaved coconut mixed with water and blended together. Sieve to extract the coconut milk.
