What is the difference between cachaça and rum?

Both are made from vesou, the sugar cane juice. But for rum, there is a prior cooking of the vesou, whereas cachaça is made directly from fresh juice, in which cereals are added, which give it those warm and caramelized notes.

If it is also called Mexican rum, cachaça is distilled directly to the desired degree (less than that of rum), and immediately bottled. It differs from agricultural rum by its drier aromatic notes.

Caipirinha recipe, the Brazilian cocktail of your summers

1. Wash a lime, dice it, removing the white central part (responsible for the bitterness).
