Almijar Del Temple History

This wine was found in an old winery in northern Spain, founded in the 60s of last century, although its facilities date back more than three centuries. It was developed by the founders of the winery, vintage 1970, with a variety of tempranillo grapes, aged in French oak barrels and then bottled for over forty years. What really makes this wine unique and exclusive, is the fact that it was hidden in an underground wine cave , isolated from the world for nearly half a century, in total darkness, stillness and silence. It is a treasure trove now, in the twenty first century meant to be enjoyed by the most discerning palates.

If you are surprised by the wines antiquity, its state, suitability for consumption, exceeding expectations of its taste, color, aromas, sensations, take us to a stage in which the senses convey to the soul the essence of the pleasantly unexpected. All this makes this wine special for one who drinks from the first drop of the bottle to the wine glass, through its aroma until it overtakes the taste.

To appreciate its flavors range, it is suitable to uncork an hour and a quarter before consumption for a proper oxygenation occurs. It is ideal to pour it into a decanter, where it will make the first tastings of the wine visual and olfactory, appreciating its bouquet, with all its nuances. The cork of the bottle are like the ones from obtained from a piece of bark of oak by an old fashioned machine from back in the days. To open the bottle, a good corkscrew should be used to remove the cap vertically, preventing breakage of a cork that has been more than four decades placed in the bottle. For conservation, wine should be stored in a dark room, with no sudden temperature fluctuations, between 7  C and 20  C, in an atmosphere of relative humidity of between 65% and 80%. The bottle must be horizontal so that the wine stays constantly in contact with the cork.
