Dates cake is a delicious and moist cake that is popular on the islands of Curacao and the Caribbean.


Ingredients

  • 500 gr wheat flour
  • 400 gr butter
  • 300 gr brown sugar
  • 300 gr pitted and chopped dates
  • 100 ml milk
  • 8 eggs
  • 1 cap vanilla essence
  • 150 gr walnuts
  • 8 gr baking powder
  • 2 teaspoon cinnamon
  • 50 ml brnady
  • 50 ml dark rum
  • 50 ml Cherry Liquer
  • 1/2 lime juice


Preparation

  1. Grind the dates in a food processor and chop the walnuts into small pieces. Mix the brandy with the rum, the cherry liqueur, the cinnamon and the lime juice and leave the dates and walnuts here for a night.
  2. Preheat the oven to 340 ° F and grease a baking pan with butter.
  3. Make sure that the butter is at room temperature. Mix the butter with the brown sugar and beat it together to form an airy whole. Then beat the eggs and the milk.
  4. Sift the wheat flour together with the baking powder into a large bowl. Add this to the egg mixture and stir into a smooth batter. Add the vanilla essence now.
  5. When the batter no longer shows any lumps, stir in the dates and walnuts.
  6. Pour the batter into the baking pan and put in the oven.
  7. Bake the cake in about 75 minutes, or insert a knife in the cake until it comes out clean.
