Aborrajados are a Colombian treat that are both sweet and savory.

They are deep fried plantains and typically stuffed with cheese.

Sometimes to sweeten things up they can also include guava paste and can be enjoyed more as a dessert.

This aborrajados recipe does not include a guava filling.

Ingredients List:

  • 2 Ripe Plantains, Black & Yellow
  • Vegetable Oil
  • 2 Eggs
  • 4 TBSP Flour
  • 2 TBSP Sugar
  • Pinch Salt
  • 2 TBSP Milk
  • 1/2 Cup Grated Cheese, Mozzarella or Monterey Jack

Preparation:

Fill a large pot with a few inches of vegetable oil and heat to 360°.

Peel and slice the plantains crosswise into 1 1/2" thick pieces.

Fry the plantain chunks in the hot oil until golden, about 3 minutes.

Remove the plantains with a slotted spoon and drain on paper towels. When cool enough to handle, place the plantain chunks onto pieces of parchment paper and flatten them to 1/4” thickness.

Put 2 tablespoons of grated cheese between 2 slices of plantain, like making a sandwich, pressing the plantain together around the edges to seal in the cheese. Repeat with remaining plantain slices.

Whisk the flour, sugar and salt together. Stir in the eggs, and gradually add enough milk to make a thick batter. Stir until well mixed.

Dip the sandwich into the batter and return them to the oil, fry in batches. Fry for 1 minute on each side or until crispy and golden brown. Remove with a slotted spoon and drain on paper towels.

Serve warm.
