‘The Spirit Less Ordinary’: Zacal Mezcal Pays Homage to Oft-Overlooked Agave Species at a Blisteringly High ABV

Zacal, an upstart spirits brand fresh out of the UK, is hoping to challenge perceptions about where and what our mezcal can be sourced from.

Legally, mezcal can be produced in nine of Mexico’s 31 states. Despite this, over 90% of commercially available mezcal is distilled in the southern state of Oaxaca, a cultural and culinary capital that has grown practically synonymous with the spirit.

Going against the grain, Zacal makes its mezcal a few hundred miles northwest in Michoacán. Founder Phil Clayton says that the state — also world famous for its food (particularly avocados)— provides a “wilder and less gentrified” terrain for agave farming.

“Michoacán’s distinctive terroir yields the two unique agave species used in our mezcals. The volcanic soil and rocks surrounding the Vinata infuse the agave with elevated nutrients, particularly potassium, intensifying the sweetness and flavor complexity,” says co-founder Phil Clayton.

“As the spirit less ordinary, Zacal invites drinkers to discover Michoacán’s essence, one sip at a time and we can promise a completely unique experience for agave fans.”

Zacal is launching with a 50% ABV Ensamble and 45% ABV Manso Sahuayo mezcal, both relatively high within their respective categories. While the Sahuayo expression is distilled using Agave Espadin, the Ensamble is distilled from a mix of Agave Bruto and Agave “Manso,” a catch-all term used to describe locally grown unclassified species.

Brimming with flavors of almonds, citrus and lingering smoke, co-founder Ian McCaig says that the brand’s mission goes beyond what’s inside the bottle.

“Zacal’s commitment extends beyond the spirit itself and we champion environmental responsibility. Recycled glass bottles, a commitment to local suppliers, and minimal water usage showcase a deep respect for the land. We are currently working towards becoming carbon neutral by the end of the year, as well as developing a plan to support local communities in Michoacán.”

Consumers in the UK can now pick up Zacal Manso and Ensamble at £65 and £95 respectively.
