Cabal Cabalgadura Mezcal Artesanal Joven embodies the essence of tradition. It all begins with 14-year-old Salmiana Agave, carefully selected from the arid landscapes of San Luis Potosí. These agave plants are cooked to perfection in a two-century-old brick and stone oven, which takes seven days. During this time, the agave absorbs the essence of steam through Sabine wood floors, imparting a unique character to the final product.

Craftsmanship Meets Innovation 

Craftsmanship meets innovation in the making of Cabal Cabalgadura Mezcal Artesanal Joven. After the slow cooking process, the agave is macerated using a Roman concrete double tahona, ensuring every drop of flavor is extracted. This is followed by fine-tuning with a single tahona stone, further enhancing the mezcal's profile. The juices are then directed through copper grates into open-air vats for natural fermentation, ignited by pulque from the same Salmiana agave.
