interferir tiene dos posibles significados
un accidente interfiere la circulación en la calle
la empresa eléctrica interfirió su servicio en un apagón programado
"que corta o impide algo / bloquear / cortar / apagar"
el trabajo se estaba haciendo muy mal así que interferimos para que dejen de hacerlo mal
"que alguien se mete en un asunto para colaborar. corta la actividad un momento para cambiar como se hace o ayudar"
este segundo uso es el que puede parecerse a entrometerse
entrometerse es que alguien esté haciendo algo y otra persona se meta en lo que esta haciendo para preguntarle que hace o ponerse a hacer cosas con el.
entrometerse también puede ser "entrometerse en una conversación" cuando dos personas están hablando y otra persona se suma sola a la conversación o se pone a escucharlos
