Comice Pear Salad With Ginger Beer Dressing – GOAT

COMICE PEAR SALAD WITH GINGER BEER DRESSING – GOAT

Juicy, sweet, perfect texture, no need to peel the fruit, the skin is that tender. My perfect salad. Contains all the qualities a perfect dish requires to achieve perfection status! 

Makes as many salads as you want

Smoked Ginger Beer Walnuts:

1/2 c. ginger beer

1/2 c. light brown sugar

1/2 t. salt

1 T. vanilla – I used imitation

few drops of liquid smoke

2 c. walnut halves

1 scoop white sugar


In large skillet, over low heat, combine ginger beer and brown sugar. Stir till dissolved.

Add salt, vanilla, liquid smoke. Stir.

Add walnuts. Stir well to coat, then stir often without leaving stove area.

When liquid evaporates and a light film of sticky covers walnuts remove from heat. Let cool to lukewarm in skillet.

Pour a large scoop of granulated sugar over walnuts. Stir to coat evenly.

Using fingers, separate large pieces and coat each piece thoroughly, then place them all in wire mesh strainer to sift off excess sugar.

Use as toppers for dishes of choice: desserts, sandwiches, salads, cooked veggies.


Dressing: Makes 5 cups

2 c. ginger beer – I used Goslings brand

3 med. size peeled bananas, cut into chunks

1/2 c. white Balsamic vinegar

2 t. pink Himalayan salt

1/2- 1 t. ground nutmeg

1 t. turmeric

fresh grind black pepper to taste

1 t. guar gum powder (thickener)


Place ginger beer and bananas in blender container. Blend till banana dissolves into ginger beer.

Add vinegar, salt, nutmeg, turmeric and black pepper. Blend till smooth on high speed.

Add guar gum. Immediately blend till smooth, about 15 seconds to be sure powder dissolves. Let set for a few minutes, then blend again, on high speed. Dressing will thicken more as it sets.

Pack into covered containers and refrigerate.

Before using I add fresh lime or lemon squeeze to taste along with chopped fresh tarragon (or crushed dried).


Now to the salad: per salad:

hearts of romaine, cut into bite size pieces

English cucumber half moon slices – peel or not; it’s up to you

thinly sliced red onion, cut into half circles

sliced fresh ripe Comice pear – keep skin on

Ginger Beer Dressing

sev. smoked walnuts

1 thumb-size piece of fresh ginger, peeled, thinly sliced into planks, stacked and sliced into tiny matchsticks – use a few sticks per salad

1-2 t. light brown sugar

fresh grind pink Himalayan salt

fresh grind black pepper

fresh tarragon leaves, stems removed


Assemble:

On individual plates place lettuce.

Arrange cucumber half moons over lettuce.

Arrange onion over all.

Arrange pear slices over lettuce.

Spoon dressing over all.

Top with smoked walnuts, ginger matchsticks, brown sugar.

Sprinkle with fresh grind salt and pepper.

Top with fresh tarragon leaves.

Serve.


Notes: Best salad I ever had.

Pears, these pears, work beautifully as substitutes for tomatoes – even better than tomatoes. Pears on every green salad is what I’m looking for now.
