Beef Apretada Dish


This recipe comes from my mom. It’s a dish made in the Philippines that is much like a beef stew, with the exception of a couple non-traditional beef stew ingredients.

If you were to be completely traditional with this dish you would use liver, but I’d have to lie to my kids to get them to eat it had I used liver, so I used beef instead.

This dish is delicious and I recommend you try this if you’re tired of the same weekly round of meals.  Really, it’s good!

Ingredients (Serves 6):

1 lb of beef (steak)
2 tbsp tomato paste
1 red bell pepper
1 small onion chopped
2 potatoes
2 tsp course sea salt
2 tsp pepper
2 tbsp bread crumbs or crushed crackers
1 tbsp oil
2 cloves garlic chopped
1 cup water
2 whole bay leaves

Directions:

1. Heat 1 tbsp oil in saucepan or frying pan over medium heat.

2. Add beef, garlic, onion and stir fry until beef browns.

3. Add 1/2 cup water, reduce heat, cover, and simmer for 20 minutes.

3. Add tomato paste with another 1/2 cup of water. Mix well in pan.

4. Add the chopped pieces of potatoes.

5. Add 2 bay leaves and crushed crackers or bread crumbs. Add your pepper now as well.  Stir it up.

6. Cover and simmer for an additional 20 minutes.

Tip: You’ll know it’s done when beef and potatoes are tender. Serve hot.  Looks good huh?
